Ingredients
- 1 1/2 lbs Pork Butt, Trimmed, Sliced into 1/4 inch thick slices
- 1 ea. Guajillo Chiles, Deseeded and Destemmed
- 1 1/2 ea. Ancho Chiles, Deseeded and Destemmed
- 2 ea. Garlic Cloves
- 1/4 ea. Onion, Rough Chopped
- 1/2 cup White Vinegar
- 1/4 cup Pineapple Juice
- 1/2 tbsp Mexican Oregano Fresh Thyme (Minced), fresh ground Black Pepper, Cumin, Paprika
- 1 1/2 tbsps Kosher Salt
- 1/8 ea. Achiote Paste, Brick
Directions
1. Working in batches if necessary, blend all ingredients together (except pork). Dip each slice of pork in the marinade and stack together in a non-reactive container. Cover with plastic wrap and refrigerate for 4 hours or up to overnight.
2. Preheat grill or grill pan; sear each slice of pork on both sides and chop into small pieces.
