Our winemaker, Mike Berthoud calls this a “classic grenache rosé.” This is picked from Hollister Hill, at a lower brix (sugar) level than we normally would have, in order to not stress out the vines. We let the juice mingle with the skins briefly—just an hour or two—for that sexy, hint-of-pink magic and a touch of depth. Fermented and aged entirely in stainless steel, it flaunts a zesty acidity that wakes up your taste buds. The finish offers a wild strawberry vibe, though slightly under ripe still untamed and delicious.
